Taste is very smooth and has a delicate texture. It compares to the likeness of a top notch chocolate - 2004 Thornton, Syrah

Important to Note:
This wine needs two hours open in the bottle…I don’t have a decanter and think that wine should be drank not viewed as art. Why have another dish to wash?

Wine:
This wine has sort of a far away smoky smell, not like smoke flavor in a BBQ sauce, but like the smell of a fall burn wafting in a distant breeze as you walk through the woods… Not overwhelmingly smoky, but smoky with a bit of sweetness blended in.

The taste is very smooth and has a delicate texture. It compares to the likeness of a top notch chocolate. After the first bite, the bite breaks down in your mouth and dissolves; then your brain computes the flavor and sends a signal telling you that you want more-which leads you to another bite- or in this case another sip.

In other words, this is one of those bottles of wine that gets poured into a glass before the glass is empty, especially in a group of wine lovers. Come on! You know you’ve done it!

Oh! And then there was dinner!

The taste of this wine complimented well my rare to medium rare rib eye and oven roasted Anaheim pepper, onions and asparagus. But my favorite flavor paring was a bite of the oven roasted Anaheim pepper and a sip of Thornton’s Syrah. It made me want to swish the wine around in my mouth to make the flavor last longer!

This wine is too expensive for me on a regular basis, but when my friends come over for dinner, I definitely would like to have at least a bottle per couple with dinner. Otherwise, someone would get left out of the enjoyment!
